Mom’s Meat Looooves

  With the nickname Kupcake, I had to go there at some point. These are easy, and I mean easy and fun. Get creative with your herbs and veggies and make a platter of mini meat loaves for your next gathering. Send us a picture of your creations to share!

Preheat oven to 350°.

Meat Loaves:
3 lbs. ground sirloin, beef or turkey
1 cup oatmeal
1 cup ketchup
2 eggs
Shredded Parmesan cheese to taste
3 tbsp. of your favorite Rub or divide into several bowls and make different “flavors”

Mix the above ingredients in a large bowl. You can divide the meat mixture into several portions and make several flavors with the following seasonings. 3 tablespoons of any of the following products: Black Dog Belly Rub™, Red Dog Rub™, Awesome Antler Rub™, Wow-A Chihuahua™, Rowdy Kitty Rub™.

Put mixture into greased small cupcake pan. I use one that holds 12 normal size cup cakes and this recipe filled it perfectly. Bake at 350° for about 25 minutes. Remove and cool.

While cooling put the toppings together. Serve at room temperature or if you want you can heat for a few minutes in the oven at 300°.

Toppings:

To make it easy, I buy Bob Evans already mashed potatoes for the “frosting”. Heat them up and divide into bowls and add a little food coloring for visual appeal and leave some white.
Shredded carrots and thinly sliced red onion sautéed in a tiny bit of butter
Micro diced red, orange, green and yellow peppers
Mom’s Whatsamajiggie Sauce™
Catsup in a squeeze bottle for decorating
Finely chopped parsley
Cherry tomatoes
